Alexander Valley Winegrowers is pleased to host the inaugural Magnum Dinner & Barn Dance to kick off the 18th annual Taste Alexander Valley. Enjoy an evening under the stars featuring live music by Supermule, a walk-around wine tasting, hand-selected magnums served by our local vintners, and a seated gourmet dinner featuring the cuisine of the most buzzed about new restaurant in the area, Valette, located in Healdsburg. Chef Dustin Valette will be working together with local Chef Tim Vallery of Peloton Catering to create a menu highlighting farm fresh ingredients and the heritage of Alexander Valley.

Dustin Valette began his culinary career at 13 washing dishes at Catelli’s in his home town of Geyserville, CA. Valette is a graduate of the Culinary Institute of America in Hyde Park, New York. His restaurant experience includes many prestigious establishments such as Agua in San Francisco, C; Bouchon in Yountville, CA; Hokus at the Mandarin Oriental Hotel in Honolulu, HI; North Ranch Country Club in Westlake Village, CA; VOX Restaurant & Wine Lounge in Henderson, NV; and most recently, Dry Creek Kitchen in Healdsburg, CA. Now, more than 20 years later, Valette finds himself back in Northern California’s wine country continuing the dream that started some 22 years ago.

Dustin, along with his brother, Aaron Garzini, were inspired with the idea of Valette Restaurant more than 15 years ago. It would serve honest food, have amazing service and house a collection of boutique-small production wines. Now, Valette opens in Healdsburg, CA in February 2015 and eager for the pubic to come and share the passion and dedication of the two brothers.

Tim Vallery found perspective by electing to receive his formal training at the prestigious Culinary Institute of America, in Hyde Park, NY. Upon his return to the Bay Area, Vallery’s restaurant experience includes many well- known establishments such as the Marriott Hotel of Santa Clara, CA; the Brasserie located in the Hyatt Vineyard Creek Hotel, Santa Rosa, CA; the Santa Rosa Golf & Country Club, Santa Rosa, CA. Vallery most recently owns and runs Peloton Catering leading his team with a focus on local farm-to-table cuisine.
